This aviation exhibition was on display between March 2003 and August 2004 in the F-02 North Connector gallery, located in Terminal 3

The exhibition focuses on customer service innovations, such as the creation of a flight kitchen for preparing meals, with examples of early airline tableware that resembles household china and bears distinctive airline markings. The popular Hawaiian route, begun in the 1940s, is celebrated with the menehune figures of Hawaiian folklore and menus bearing Polynesian tapa cloth designs offered cuisine prepared by well-known restaurants, such as Trader Vic's.
